Purposes of the Project:

  1. To evaluate changes in quantitative and qualitative composition of antocianines in cherry, currant, black sorb and elder fruit during their ripening,
  2. To determine stability of various antocianines,
  3. To investigate bioactivity of antocianines in in vitro systems of heart muscle fibres, mitochondrias, and plant cells,
  4. To prepare structures for management of expression of structural and regulatory genes in plants
  5. To develop plants which would constitute producers of stable antocianines valuable to people,
  6. To prepare food colorings production technologies
